| Directions: | Preheat oven to 275.
Melt shortening. Whisk in honey, pumpkin, & vanilla until smooth.
Stir in dry ingredients (except for chocolate) until a smooth paste forms. Mix in chocolate chunks. Dollop with a tablespoon onto greased parchment paper. Spread and flatten. Bake 15 min, then move sheet to top oven rack and bake 5 more minutes. Let cool on sheet.
Store in plastic baggies lined with paper towels. Yileds 16 cookies. |
