Paleo Pumpkin Chip Cookies

Ingredients:
2T nonhydrogenated shortening
2T honey
1/2 C canned pumpkin
1/2 tsp vanilla
1C almond flour
1/4 C coconut flour
1/4 tsp stevia
1/2 tsp baking powder
2 tsp cinnamon
1/8 tsp nutmeg
3 squares dark chocolate broken into chunks
1/2 C walnuts or pecans (optional)
1/8 tsp salt

Directions:
Preheat oven to 275.

Melt shortening. Whisk in honey, pumpkin, & vanilla until smooth.
Stir in dry ingredients (except for chocolate) until a smooth paste forms. Mix in chocolate chunks. Dollop with a tablespoon onto greased parchment paper. Spread and flatten. Bake 15 min, then move sheet to top oven rack and bake 5 more minutes. Let cool on sheet.

Store in plastic baggies lined with paper towels. Yileds 16 cookies.
