Strawberry Cream Cake

Ingredients:
1 - 9" Yellow Cake Layer
1 (5.1 oz) pkg. instant vanilla pudding mix
1 1/2C milk
1/2 tsp grated orange zest
1 1/2 cup cool whip, thawed
1 (16oz) pkg. strawberries, trimmed and quartered
1/3C low sugar strawberry preserves, melted
Directions:
Trim top of cake layer to level (if necessary).
Place cake layer in bottom of 8" x 3" springform pan. In medium bowl, whisk together pudding mix and milk for 2 min. Stir in zest. Gently fold in cool whip. Spread over cake layer.
Cover pan and chill until firm (4 hrs.)
Remove side of pan. Transfer cake to serving plate. In bowl, mix strawberries and preserves. Stir until coated. Spoon over cake.
