Recipe Name:Salmon (Pan-Crisped) with Garlic Dijon Sauce

Notes:
Ingredients:4 Salmon filets 4oz.ea.
salt and pepper
2tsp olive oil
1T butter
3 garlic cloves,monced
1 small shallot diced
1 tsp fresh sage
1 1/2T fresh thyme
1/4C white wine
3/4C low fat evap milk
1 1/2T Dijon Mustard
Directions:Season filets with salt and pepper.
Heat a large skillet on medhi heat.
Place salmon skin side up in pan and cook 8-10min or until firm and sides are opaque.
Transfer to plate and keep warm.

Reduce heat to medium.
Melt butter in skillet and add garlic,shallot,sage and thyme.Cook stirring frequently 1 min.
Stir in wine to deglaze pan.
Cook 2-3 min.Whisk in milk and mstard and cook another 1-2 min until bubbly and thickened.
Remove and pour over salmon.
