Notes:
Ingredients:1C sorghum flour
1 1/2C tapioca starch
1/2C millet or brown rice flour
1/4C buckwheat or millet flour
1/4C almond or hazlenut flour
2T coconut flour
1 tsp xanthan
1 tsp salt
1 packet rapid rise yeast
2T brown sugar
1 1/2C warm liquid (3/4C non dairy milk & 3/4C water)
1/4C light olive oil
2 eggs, beaten
1/2 tsp lemon juice or rice vinegar
Directions:Turn oven on briefly to warm it. Grease a 12 cup muffin tin (or use liners).
Whisk together flours and dry ingredients.
Add wet ingredients and beat until thick batter forms.
Spoon bread dough into muffin tins. Even out tops with wet fingers. Place pan in warmed oven and let rise.
Set timer for 50 minutes.
Turn oven on to 350. Bake until firm (22 minutes).
Thump with finger tip. Should sound hollow.
Cool on rack.
