| Directions: | Cut zucchini in half lengthwise, scoop out seeds and some pulp forming a shell. Dice seeds and pulp and saute with butter, mushrooms, carrots and onions until tender. Stir in salt, pepper and cheese.
Heat oven to 375. Fill zucchini shells with mixture.
Place on jelly roll pan and pour water around zucchini.
Cover with foil and bake 30 min . |
