Ingredients:2 slices bacon
1/2C chopped onion
1 tsp garlic
1 lb. beef stew meat
5 carrots, peeled & Diced
2C beef broth
1C red wine
3T quick cooking tapioca
3T tomato paste
1/2 tsp thyme
2T butter
1/2 C chopped mushrooms
S & P to taste
Directions:Cook bacon. Crumble and tranfer to slow cooker. Add onions and garlic, cook until tender. Brown stew meat in bacon grease as well. Combine all ingredients except for butter and mushrooms in slow cooker. Cook low 6-8 hrs. Saute mushrooms in butter until tender and stir into finished stew.
