Recipe Name:Cauliflower Fried "Rice"

Ingredients:1 large head cauliflower
2 large eggs
2 tsp plus 2T cocount aminos
coconut oil, for sauteing
1/2 med onion, diced (1/2 C)
1 C steamed broccoli, chopped
6-8 oz. BBQ Pork
2-3 scallions (dark green tops), thinly sliced
S & P to taste
2 tsp sesame oil
2 tsp sesame seeds for garnish
Directions:Break cauliflower into florets and pulse in processor unitl it looks like rice (might need to do it in 2 batches).
Zap cauliflower in microwave for 2 minutes.
Toast sesame seeds in pan over high heat 3 - 5 min. Remove and set aside.
Scramble eggs with 2 tsp of coconut aminos.
Heat 1tsp coconut oil and add eggs until cooked through. Remove from pan and save for later.
Heat 1 tsp cocount oil (in same pan) and saute diced onion until tender.
Add 1T coconut oil to onions and increase heat. When pan is hot, add cauliflower, egg, broccoli, and pork. Stir.
Sprinkle with 2T coconut aminos and stir until heated through (3 min).
Stir in sesame oil.
Sprinkle with scallions and sesame seeds.
