Ingredients:2T Gelatin (2 envelopes)
1/2C cold water
2C sugar
1C hot water
pinch of salt
1 tsp vanilla (OPTIONAL: 1/2 vanilla & 1/2 peppermint extract)
powdered sugar
Directions:In a small bowl, soften gelatin in cold water.
In a med pot, combine sugar and hot water. Boil to soft ball stage (236-238 degrees).
Add gelatin and salt; beat until stiff. (I use kitchen aid).
Add vanilla and combine thouroughly.
Pour into 8x8 pan dusted liberally with powdered sugar. Allow to stand until stiff to hold shape (can refrigerate to speed up process).
Cut into strips. Remove from pan and then cut strips into squares and roll in more powdered sugar. Store in bags or tupperware in fridge.


OTHER EXPERIMENTS: Roll in half powdered sugar and cocoa. Sub almond or coffee extract for mocha marshmallows.
