Green Chile Stew

Ingredients:
12-14 oz - hatch green chile (1 jar El Pinto roasted green chile works too)
2 Lb. - pork shoulder, cubed (can sub pork ribs or pork loin roast)
2T - veg. oil
2/3C - onion, diced
2 cloves - garlic, minced
3C - chicken broth
1/2 tsp - oregano
1 tsp - salt
1 tsp - pepper
3 - bay leaves
1/2 tsp - cumin
14 oz can - diced tomatoes with juice
3 - potatoes, cubed



Directions:
Brown meat with salt, pepper, garlic and onion
Drain fat and add to pot
Add spices, broth, chiles, tomatoes, and potatoes
cook on low for 8 hrs.
