Spatchcock chicken (cut backbone out)
Liberally coat with BBQ rub
Let rest for an hour or two
Ingredients:
Kamado Joe
BBQ Rub
Whole Chicken
Drip Pan
2/3 Apple wood, 1/3 Cherry wood blocks
Directions:
Kamado Joe prep:
- Add coals, start fire, place 3 to 4 larger chunks of wood around
- Once coals are ready, close lid
- Let grill approach 350 degrees (up to 360 or so is ok)
- As it gets close (320 to 330), start closing vents down
- Bottom should end up about 2 to 3 fingers open, Top should be about on the first mark
Place drip pan on top of "pizza stones", and below the grate
Place Chicken in center of grill
Let smoke for 1 to 1 1/2 hours, approaching 160 to 165 degrees
Remove at 160 to 165, let rest
