Sausage Breakfast Casserole

Ingredients:
Nonstick Spray
1 lb. Breakfast Sausage
4 scallions, chopped (white & green parts divided)
1 red bell pepper,chopped
10 eggs
1 1/4C cream
1 T dijon mustard
2 tsp Tabasco
1 1 /2 tsp salt
1 tsp pepper
2C sharp shredded cheese
30 oz pkg frozen hashbrowns, thawed
Directions:
Preheat Oven 350
Grease 9x13 foil pan or casserole dish with nonstick
Brown sausage in non-stick skillet. When close to done, add pepper and white parts of green onions. Cook until jus tender (3 min)
Whisk eggs, cream, mustard, Tabasco, S & P in large bowl.
Fold in 1 1/2C of cheese, hashbrowns, and sausage into egg mixture.
Transfer to baking dish.
Cover with foil and bake 50 min (OR put in fridge up to 2 days prior)
Remove foil and top with 1/2 C cheese. Increase oven to 400 and bake until center is set (15 min or so).
Let stand 10 minutes, top with green scallions, serve.
