Ingredients:
Peanut Oil for frying
Wooden skewers
2T cornstarch
6 hot dogs
1C flour
1C yellow cornmeal
2tsp sugar
2tsp baking powder
1 1/2 tsp salt
1/2tsp baking soda
1/2tsp garlic powder
1 1/2tsp fresh thyme
1 large egg
1 12 oz can/bottle of light beer
Directions:
Fit dutch oven with deep fry thermometer. Add enough oil to reach 2 in. up side and heat to 350. Place wire rack on rimmed baking sheet.
Place cornstarch in baking dish and dust each hot dog with cornstarch, shaking off any excess. Set aside.
In large bowl, whisk together flour, cornmeal, sugar, baking powder, salt, baking soda, and garlic powder, then toss with thyme.Add egg and beer to dry ingredients and whisk until smooth and combined.
Insert skewer into hot dog about 1 in deep and dip in batter, twirling to coat.
Transfer to oil and use fork to slide hot dog off skewer. Cook until golden 3 -4 min. Transfer to prepared rack.
Repeat with remaining dogs and batter cooking up to 2 at a time.If desired, stick clean skewer in to end of each cooked frank and serve.
