Mocha Truffles

Ingredients:
1/3c heavy cream
1/2 stick margarine/butter
1T instant espresso crystals
2c semisweet chocolate chips (12oz)
1/3c white chocolate chips

Decoration: powdered sugar, cocoa powder, or melted vanilla chips drizzled
Directions:
Have ready a glass pie plate or 8-9in baking dish, cookie sheet and paper candy cups.

Heat cream and butter in small sauce pan over med heat or in a med bowl in microwave on hi until cream simmers and butter melts. Whisk in espresso crystals until completely dissolved.
Add semisweet and white chocolate chips. Stir over low heat or microwave on med stirring often, until melted and smooth.
Pour into pie plate or dish and chill 2hrs or until consistency of soft fudge. Line cookie sheet with wax paper. Roll heaping teaspoonfuls truffle mix into 3/4in balls. Place on lined sheet and chill 1hr until firm.
