Ingredients:
1T EVOO
1 tsp salt
1/4tsp black pepper
1/3C almond flour
1/4C parmesean
1 1/2T ground flaxseed mixed with 1/4C hot almond milk (or 2 eggs whisked)
1 zuchini cut into matchsticks
1 yellow squash cut into matchsticks
Directions:
Heat oven to 350. Lightly oil a baking sheet with 1/2T oil
Combine next 4 ingredients in a shallow bowl
Place flaxseed mix in a separate bowl
Dip each stick in flaxseed mix, then transfer to flour mixture and turn until lightly coated.
Place on prepared cookie sheet and drizzle with remaining oil.
Bake 10 min. Turn over and bake another 10. Fries should be golden brown.
