French Toast Bake

Dashing Dish
Ingredients:
1 loaf GF Bread
2 eggs
8 egg whites (or 1C from carton)
1/2C cottage cheese
1/2C pumpkin
1C almond milk
1 tsp cinnamon
1/2 tsp salt
1/2C baking stevia OR 12 packets OR 1C sweetener that measures like sugar
1/2tsp pumpkin pie spice
1 tsp vanilla
1/2C maple syrup

TOPPING

1/4C maple syrup
1/2 tsp cinnamon
1/4C chopped pecans
Directions:
Spray 9x13 dish non-stick.
Cut off crusts and cut bread into cubes arend spread into casserole dish.
In blender combine egg mixture until smooth.
Pour over bread. Cover with foil and refrigerate overnight (min. 4 hrs.)

Let stand to room temp 30 min - meanwhile, preheat oven to 350.
Remove foil.
Combine topping ingredients and pour over top of bread/egg.
Bake uncovered 50-60 min.

Serve with whipped topping &/or maple syrup.

OPTIONAL: sub applesauce for pumpkin and eliminate pumpkin pie spice for "regular taste" or swap banana for pumpkin for banana bread toast!
