Use the BBQ Rub mix in this recipe app.
Sprinkle ribs with rub, let come to room temp.

Suggested wood chips: Hickory
Cook ribs in smoker for 3 hours at 200 degrees, using wood chips all three hours.
After 3 hours, wrap ribs in heavy foil, cook an additional 1 - 1 1/2 hours.


D notes: Set smoker at 200 for first hour, then add potatoes (if desired) and bump temp up to 220 for two hours (ribs at 170ish). Wrap in foil, bump temp to 245ish for two hours to get ribs above 195. Ok to leave potatoes on once they’re in. About 5.5 hours total. Just use wood at the beginning, don’t reload.
