Potato Latkes (GF)

Ingredients:
3 large russet potatoes (2.5 lbs.)
1 small onion
3 large eggs
1/4 c gluten free flour blend
1 1/2 tsp salt
Olive oil for frying
Directions:
Peel potatoes, cut into small pieces and submerge in cold water to prevent discoloration.
Peel onion and cut into pieces. Coarsely grate potatoes and onion using grater attachment on food processor.
Transfer to a large mixing bowl. Add eggs, flour, & salt - mix.

Line two cookie sheets with parchment paper. Top each with a double thickness of paper towel.
Coat the bottom of a large skillet with 1-2T olive oil and heat to med hi.
Drop about 2T potato mixture onto hot oil. Press gently to flatten and fry until underside is golden. Flip and brown other side.
Drain on paper towel lined sheets.
