Ingredients:
5 cloves garlic coarsely chopped
1 Whole Fryer chicken, cut up (can substitute wings & drummettes)
1 package italian sausage, cut into large chunks
2 lbs. red potatoes, cut into thick slices
2 sprigs fresh rosemary
red wine vinegar
salt & pepper
Directions:
Pre heat oven to 400.
In a large skillet, brown potatoes in olive oil. Remove potatoes. Brown sausage pieces. Remove from skillet. Brown chicken pieces in oil (do not skin chicken).
After all elements are browned, place in large baking pan. Scatter garlic over top and sprinkle with salt and pepper. Remove leaves from rosemary and scatter over top. Sprinkle 1/4C vinegar over entire pan.
Put pan in oven for 20 min. Remove and stir. Sprinkle with more vinegar. Repeat this process two more times. Total baking time is 60-80min.
