Ingredients:
pizza dough
1/2C duck sauce (or plum sauce)
1/2 tsp crushed red pepper flakes
2C shredded provolone (or monterey jack) cheese
1/2 red bell pepper thinly sliced
1T veg oil
2T soy sauce
1 heaping tablespoon peanut butter
2 tsp tobasco
2tsp grill seasoning
1/2 lb chicken breasts
2T honey
2T rice wine vinegar or cider vinegar
1/4 seedles cucumber cut into matchsticks
4 scallions, chopped
1C bean sprouts
cilantro, optional
1/4C chopped peanuts
Directions:
Preheat oven to 425.
Layout pizza dough on cokie sheet. Spread dough with duck sauce. Sprinkle with crushed red pepper flakes adn top with cheese and peppers. Bake 15-17 minutes.
Combine veg oil, soy sauce, peanut butter, tobasco, and grill seasoning. Coat chicken with mixture. Let stand 10 min and then grill. Slice into thin strips.
Mix honey and vinegar and add cucumber. Turn to coat evenly.
Top cooked pizza with chicken, scallions, sprouts and cilantro. Drain cucumbers and scatter over pizza. Garnish with peanuts.
