Chicken Scaloppine Marsala

Ingredients:
Potatoes:
1 1/2lbs yukon gold cut into 1 1/2in pieces
1C chicken broth
1/2 tsp salt
1/8 tsp black pepper
pinch gound nutmeg and cayenne
1T chopped parsley

Chicken:
1 1/4lb chicken cutlets
1/8tsp salt
1/8 tsp pepper
1C beef broth
1T four
1/2 C marsala wine
1 can (4oz) sliced mushrooms, drained
2T unsalted butter
1T chopped parsley
Directions:
Put potatoes in pot and cover with water. Bring to a boil and simmer 15-20min.
Drain potatoes and mash gradually adding broth. Stir in seasonings.

While potatoes are cooking heat a nonstick skillet over med hi heat. Spray with non-stick. Season chicken with salt and pepper. Cook 2min per side and remove.
Let skillet cool and wipe clean. Whisk together beef broth and flour. Add to skillet and simmer. Stirin marsala and mushrooms. Add chicken and simmer covered 15min.
Turn off heat and whisk in butter. Sprinkle with parsley and serve with potatoes.
